Since moving to London in 2006, he has honed his craft at leading establishments, including Michelin-starred kitchens, before joining Min Jiang in 2011.

Through dedication and consistency, he rose through the ranks to his current role, earning recognition such as the World Cuisine Chef Award from the Craft Guild of Chefs. Renowned for his mastery of the restaurant’s signature wood-fired Beijing Duck, Chef Wong blends traditional Chinese techniques with a contemporary approach, continually evolving Min Jiang’s cuisine while honouring its heritage.

With more than 45 years of experience, Dim Sum Master Chef Chiu Wong brings exceptional skill, precision and tradition to Min Jiang’s renowned dim sum offering. He trained for a decade in Hong Kong and Shanghai, where he mastered the time-honoured techniques, discipline and finesse that define authentic Cantonese dim sum. Today, Chef Wong continues to honour these traditions through meticulous craftsmanship and consistency, creating delicate, hand-finished pieces that showcase both artistry and flavour. His deep expertise and commitment to heritage remain central to Min Jiang’s culinary identity.

As General Manager of Min Jiang, Chun Lee brings a warm, welcoming presence and a strong commitment to service excellence at every guest touchpoint. Having been part of Min Jiang since its opening in 2008, Chun has played an integral role in shaping the restaurant’s distinctive hospitality culture.

Known for his genuine care and attention to detail, he has built lasting relationships with guests over the years, often welcoming multiple generations of the same families, as well as loyal regulars who have become part of Min Jiang’s extended community.
